The universe conspires to get me to try this dish. I was born and raised in Mexico yet I did not acquire the taste for some of the most "extravagant" dishes like Menudo made from stomach/intestine lining. Just the sound of "Birria" encouraged me NOT to ask how this food was made and/or what ingredients were used. This past New Year's Eve, an American friend was invited to a Mexican family celebration dinner and they served Birria, of course. I did not say anything to my friend but decided to investigate what exactly he had consumed. I was pleasantly surprised and dare I say, curious. Give me credit. I did try the flavorfully spiced crickets in Oaxaca.
